Ingredients

Crust
1 1/4 cups beer warmed
1 teaspoon salt
2 tablespoons sugar
1 tablespoon olive oil
3 cups bread flour
2 teaspoons yeast, active dry
Filling
4 each roma tomatoes chopped
3 cloves garlic minced
1 x basil fresh, chopped
1 each chicken breast cooked and chopped
1 x parmesan, parmigiano-reggiano cheese, grated crumbled
1 x feta cheese crumbled

Directions

Choose your favorite method for making dough.

While you're waiting, combine the tomatoes, garlic, and basil, and set aside.

Divide the dough into two balls, and roll one into a circle approximately 12 inches in diameter.

Layer half of the circle with parmesan cheese, chicken, tomato mixture, and a liberal dose of crumbled feta.

Fold crust over and seal the edges.

Repeat with other half of dough.

Bake at 350 degrees F for about 15 to 20 minutes.

When done, brush the crusts with melted butter, and enjoy.

Rice-Stuffed Cornish Hens

This was an interesting mix of flavors, but it lacked pizzazz. It also took 2 hours to fully cook. Nice presentation but we thought a whole bird was too much for one person.
