These pork chops taste like a Caribbean beach vacation on a weeknight budget.

Orange juice, fresh lime, a splash of dark rum, and a blend of ginger, nutmeg, and cloves create a marinade that’s both sweet and spicy with serious tropical flair.

Toss everything into a ziplock bag, let it sit overnight, and the grill does the rest in about 12 minutes.

The sugar in the marinade caramelizes into gorgeous char marks while the citrus keeps the meat juicy and bright.

Pro Tips

  • Marinate overnight for the best flavor. Four hours is the minimum, but 24 hours lets those spices really penetrate the meat.
  • Don’t skip the rum. It adds a toasty sweetness you can’t replicate. But if you must, an extra splash of orange juice works in a pinch.
  • Use indirect heat on the grill to avoid flare-ups from the sugary marinade. Cover the grill and let convection do the work.

Directions

Combine all ingredients in a ziplock bag; seal bag and refrigerate for 4 to 24 hours.

Remove chops from marinade, discarding leftover marinade.

Grill chops quickly over indirect heat in covered grill about 10- 12 minutes, turning once to brown both sides.
