A lighter Cajun mayo made with light mayonnaise and low-fat yogurt, seasoned with cumin, oregano, cayenne, and garlic salt. Mix it up a day ahead and let the spices meld overnight.

This Cajun mayo blends light mayonnaise with low-fat yogurt for a creamy base that’s lighter than straight-up mayo but still rich enough to cling to everything it touches. Cumin, oregano, cayenne, garlic salt, and black pepper give it a warm, earthy Cajun kick.

The trick is patience. Mix it 24 hours before you plan to use it so the spices have time to bloom and marry into something greater than the sum of their parts.

Spread it on po’boys, use it as a dipping sauce for fried shrimp, or dollop it on burgers when regular ketchup and mustard just won’t cut it.

Kitchen Tips

  • The 24-hour rest is not optional. Freshly mixed, it tastes like spiced mayo. After a day in the fridge, the flavors round out and deepen completely.
  • Start with a light hand on the cayenne and add more after the overnight rest if you want more heat.
