Ingredients

2 each chicken breasts halves, skinless, boneless, chopped in thin strips
2 teaspoons cajun seasoning
2 tablespoons butter
8 slices green bell pepper
8 slices sweet red bell peppers
4 large mushrooms fresh, sliced
1 each scallions, spring or green onions sliced
1 cup heavy whipping cream (1 to 2)
1/4 teaspoon basil
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
4 ounces pasta, linguine cooked, drained
1 x parmesan, parmigiano-reggiano cheese, grated grated (optional)

Directions

Place chicken and cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat.

In a large skillet over medium heat, sauté chicken in butter until almost tender, about 5-7 minutes.

Add peppers, mushrooms and onions; cook and stir for 2-3 minutes.

Reduce heat. Add cream and seasonings; heat through.

Add linguine and toss; heat through.

Sprinkle with Parmesan cheese if desired.

Oh my goodness. Words cannot describe how good this recipe is. I absolutely loved it. I added a little more cajun seasoning than it said because I love spiciness and it was perfect. I will definitely make this a meal to share with everyone.

Very easy and quick. Used penne pasta in lieu of linguini. My wife said I was wasting my time, kids would not eat. But, they LOVED it, said they want it again tomorrow. Son said 'you really out-did yourself dad'. Next time I think I'll add some capers.

This is the best dish ever! I added a few (about 10 slices) of jalepeno peppers to the chicken/butter/cajun seasoning mixture to give it a little kick, I ate the whole batch myself over a weekend, can't wait to make it for sharing :)

Best ever! i didnt add peppers and instead of linguini, i used spaghetti angel hair noodles

very filling and good I think it's could use bit more spiciness but all in all it was good i give this dish a 4 star rating

both my son and husband loved this. Nice and spicy. Serve with salad and bread. Excellent

This recipe was very good. I fixed it for my boyfriend and he loved it. He liked it so much he went back for 3rds and I even had to send some to work with him. I loved it myself as a matter of fact Im fixing it again tonight.6-12-03 thanks for the recipe. Mindy

Excellent! I love the cajun-seasoned chicken with creamy pasta. The combination is wonderful, although I thought the sauce would need more kick. I would definitely make this recipe when I have to entertain guests. Thanks for the recipe.

This was a superb recipe. I cooked it last night for my mom and dad. Mom normally hates chicken but I do believe she was in total ecstacy when she took the first bite. Dad went back for seconds and told me it was a different, exotic dish. And me? Let's just say I plan to make it again... very soon. I've been spreading the word about this recipe. Thank you for sharing!!
