40 minForget the freezer aisle. These homemade Cajun chicken nuggets are crispy, spiced, and make about 5 dozen pieces from just 2 pounds of chicken breast.
The coating is clever: onion soup mix does the heavy lifting for flavor, combined with breadcrumbs, chili powder, cumin, thyme, and red pepper flakes for that Cajun kick.
Cut the chicken into 1-inch pieces, dredge them well, and pan-fry in a half-inch of oil until golden and cooked through. Drain on paper towels and serve warm with your favorite mustard for dipping.
Need a shortcut? There’s a microwave option too that cuts the cooking time down to 6 minutes flat.
These are crowd-pleasers for game day, kid-friendly dinners, or anytime you need a platter of snackable protein.
Kitchen Tips
- Cut the chicken into even 1-inch pieces for consistent cooking. Uneven sizes mean some will dry out while others are still raw in the center.
- Don’t skimp on the coating. Press the breadcrumb mixture firmly onto each piece so it stays put during frying.
- Fry in batches and keep the oil at a steady medium heat. Overcrowding drops the temperature and gives you soggy nuggets instead of crispy ones.
- Serve with assorted mustards: Creole, whole grain, honey, or Dijon all pair well with the Cajun spice.
