Ingredients

1 cup onion chopped
1 cup green bell pepper chopped
6 each scallions, spring or green onions sliced
1/2 cup vegetable oil
1/2 cup flour, all-purpose
3 cups water
14 1/2 ounces tomatoes, stewed, canned cajun-style
2 cups tomatoes chopped, peeled
6 ounces tomato paste
32 ounces corn, canned, whole kernels
3 cups ham cooked, cubed
1 1/2 pounds smoked sausage fully cooked, sliced
1/8 teaspoon cayenne pepper or to taste
1 x salt to taste
1 x red hot pepper sauce (eg. Tabasco) to taste

Directions

In a large kettle or Dutch oven, sauté onion, green pepper and green onions in oil until tender, about 5 minutes.

Add flour and cook until bubbly.

Add water, stewed tomatoes and chopped tomatoes and tomato paste; mix well.

Stir in the corn, ham, sausage, cayenne pepper, salt and hot pepper sauce.

Bring to a boil, stirring frequently.

Reduce heat; simmer, uncovered for 1 hour, stirring occasionally.

An Absolutely Perfect Roast Goose!+

This method worked great. It turned out exactly according to the directions. One of the guests had only had goose decades before and it wasn't a pleasant experience. He raved about this one though, not full of fat, just lovely dark rich meat. It went very well with a homemade cranberry sauce I also made.
