1 hrsThis no-cook curry dip is a wild ride of flavors that somehow all land in the right place. Tart Granny Smith apple, sweet crushed pineapple, salty blue cheese, and crunchy cashews, all held together with a curry-spiced mayo base.
Soaking the apple slices in lemon water before dicing keeps them crisp and bright white. Don’t skip this step or you’ll end up with brown, mushy bits dragging down the whole bowl. The pineapple needs to be drained thoroughly too, especially if you’re using canned. Excess juice will thin out the dip and make it soupy instead of scoopable.
Folding the cashews in last preserves their crunch. Stir them in too early and they’ll soften as the dip chills.

- Serve with sturdy dippers like pita triangles, thick-cut bell pepper strips, or radishes. Crackers work but they break under the weight of those chunky mix-ins.

Directions
Mix the water and lemon juice in a small bowl.
Slice the Granny Smith apple and put the slices into the lemon water to soak.
Set aside.
Put the mayonnaise into a serving bowl and add the celery, pineapple, curry powder, salt and pepper and blend well.
Fold in the cashews.
Remove the apple slices from the lemon water and dice.
Stir into the mixture and then stir in the blue cheese, blending well.
Cover and chill.
Makes about 2 cups of dip.
