Frozen peas in butter sauce tossed with tender zucchini strips and a pop of diced pimento. A simple, colorful vegetable side for two that’s ready in under 40 minutes.

Sometimes the simplest sides are exactly what dinner needs.

Frozen peas in butter sauce do the heavy lifting here, while zucchini strips get simmered until just tender and a splash of diced pimento adds a little color and sweetness.

Toss it all together and you’ve got a bright, buttery side dish for two that pairs with just about anything from grilled chicken to pan-seared fish.

  • Simmer the zucchini until the water fully evaporates so the dish doesn’t end up watery

Directions

Cook peas according to package directions.

Pour into a serving bowl; cover with plastic wrap and set aside.

Meanwhile, in a skillet, simmer water and zucchini over medium heat until water is evaporated and zucchini is tender.

Stir in peas and pimiento.
