Here’s the secret to making pancake mix taste like you made it from scratch.

Swapping water for buttermilk adds tang and helps create those fluffy, airy centers everyone loves.

The melted butter enriches the batter and helps brown the edges to golden perfection.

Let the batter rest for a few minutes after mixing so the baking soda can work its magic and create extra lift.

Kitchen Tips

  • Adjust consistency: Buttermilk thickness varies by brand, so add more if batter seems too thick
  • Don’t overmix: Whisk just until combined; a few lumps are fine and keep pancakes tender
  • Wait for bubbles: Flip when bubbles form and edges look set, not before
  • Keep warm: Stack finished pancakes on a plate in a 200°F oven while you cook the rest
