45 minBurgers Santa Fe load all the Southwestern flavor right into the patty before it hits the grill. Crushed tortilla chips, salsa, cheese, scallion, cumin, and garlic salt all get mixed into the ground beef so every bite carries fajita-stand flavor from edge to edge. A second hit of salsa and melted cheese tops the cooked burger for a double layer of Southwestern punch.
The tortilla chips are doing real work here. As they break down in the meat, they act like a flavored panade, holding moisture inside the patty so the burger stays juicy even after a hard sear. Salsa adds another shot of acid and seasoning that beef alone never quite reaches.
Keep the mixing light. Overworked ground beef turns into a hockey puck on the grill. Press a small dimple in the center of each patty with your thumb before grilling so they cook flat instead of doming into meatballs. Five minutes per side over a hot grill at medium-high heat hits a clean medium with juicy pink centers. Serve with Mexican rice or refried beans on the side.
Pro Tips
- Use 80/20 ground beef. Leaner cuts dry out fast once you mix in salsa and chips.
- Crush the tortilla chips fine but not powdery. A bit of texture keeps the patty interesting.
- Mix only until everything is barely combined. Heavy kneading toughens the meat.
- Let the patties rest for 10 minutes after grilling. The juices redistribute and the cheese sets just enough to slice.
