This is Buffalo wings the way they were meant to be: sticky, spicy, and unapologetically messy.

Unlike bottled wing sauce shortcuts, this version builds the heat from scratch with fresh garlic, lemon juice, tomato sauce, and Tabasco. The result is a sauce with more depth and tang than anything you’ll squeeze from a bottle.

The homemade blue cheese dressing is equally crucial. Real blue cheese crumbles suspended in mayo and sour cream give you that cooling contrast that makes the heat bearable (and makes you reach for another wing).

Chef Tips

  • Oil temperature is everything: Keep your frying oil at a steady 375°F. Too cool and the wings absorb grease and turn soggy. Too hot and they burn outside while staying raw inside.
  • Don’t crowd the fryer: Fry in batches so the oil temperature doesn’t drop. Overcrowding gives you steamed wings instead of crispy ones.
  • Blue cheese quality matters: Use real blue cheese like Roquefort, Gorgonzola, or Point Reyes. Pre-crumbled stuff from a bag tastes like salty cardboard.
  • Make ahead the dressing: The blue cheese dressing tastes better after sitting in the fridge for a few hours. The flavors meld and the cheese softens into the cream base.
  • Serve hot, dressing cold: The temperature contrast between piping hot wings and ice-cold blue cheese dressing is part of what makes this combo work.
