Buffalo Chicken Tacos

I threw this one together for my sister tonight. It went over BIG!

Ingredients

2 1/2 cups shredded cooked chicken breast
1/3 cup margarine or butter
1/2 cup hot sauce (e.g. Tabasco, Texas Pete's or even Sriracha)
8 (6") soft flour or corn tortillas
1/2 cup shredded Mexican blend or Jack cheese
1 carrot, shredded
2 scallions, sliced
1 small stalk celery, julienned
1 cup shredded romaine lettuce
1/2 cup chunky bleu cheese dressing, light or regular
Handful of Cool Ranch Doritos, crushed (optional)

Ingredients

2 1/2 cups shredded cooked chicken breast
1/3 cup margarine or butter
1/2 cup hot sauce (e.g. Tabasco, Texas Pete's or even Sriracha)
8 (6") soft flour or corn tortillas
1/2 cup shredded Mexican blend or Jack cheese
1 carrot, shredded
2 scallions, sliced
1 small stalk celery, julienned
1 cup shredded romaine lettuce
1/2 cup chunky bleu cheese dressing, light or regular
Handful of Cool Ranch Doritos, crushed (optional)

Directions

  1. In a medium saucepan over medium heat, melt the margarine or butter. Whisk in the hot sauce until completed blended; add the shredded chicken. Cover and heat through until hot.

  2. Warm tortillas in a dry skillet or in the microwave according to package directions.

  3. Assembly: Place some shredded cheese on the warmed tortilla, some chicken, scallion, shredded carrot, celery sticks and shredded lettuce. Drizzle with dressing and sprinkle with some crushed Doritos, if desired. Roll up and serve.

So good - made it the other night with ground chicken instead :)
