Budwig cream is a blended breakfast based on the Budwig diet protocol, which combines cold-pressed oil with cottage cheese to improve the bioavailability of essential fatty acids. This version adds banana, honey, and lemon juice for natural sweetness and tang.

The budwix grain-and-nut mixture gets ground first until gritty, then everything else goes into the blender and gets processed smooth. The cottage cheese emulsifies with the oil, creating a thick, creamy texture that’s closer to a mousse than a smoothie.

Lemon juice does more than add brightness here. It helps the cottage cheese break down into a smoother consistency and balances the richness of the oil and honey.

Directions
