The two-stage cooking is the trick. Chicken poaches with the potatoes, ham, onion, and water for 4 to 5 hours on low, then comes out long enough to debone before the meat goes back in. The pot turns to high for the final hour while the tomatoes, lima beans, and corn finish.
Deboning mid-cook keeps the chicken moist while building a richer broth from the bones. A small pinch of sugar at the end balances the tomato acidity without making the stew taste sweet.

- Bone-in chicken pieces give the most flavor. Skinless thighs work beautifully for tender, deeply flavored meat.

Directions
In a crockpot combine chicken with water, onion, ham, amd potatoes.
Cook covered on LOW for 4 to 5 hours or until chicken is done.
Lift chicken out of pot; remove meat from bones.
Return chicken meat to pot.
Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper.
Turn control to HIGH.
Cover and Cook on HIGH 1 hour. Serve in large individual bowls.
