40 minBrunswick stew is one of those Southern standards that usually takes half a day of tending a pot. This version uses the microwave to cut that time down to about 40 minutes while keeping the spirit of the original: fall-apart chicken, a thick broth, and a mix of vegetables that screams summertime in the South.
The chicken gets cooked in water with whole peppercorns, bay leaves, and salt first. That 15-minute microwave simmer builds a quick broth with real flavor. Once the chicken is done, cut it off the bone into chunks, discard the peppercorns and bay leaves, and add the vegetables: fresh tomatoes, sliced onion, lima beans, corn, and okra.
The okra does double duty here. It adds flavor and acts as a natural thickener, releasing its starches as it cooks to give the stew that characteristic silky body.
Kitchen Tips
- Cut the chicken off the bone after the first cook; bone-in pieces during the broth stage add more flavor than boneless
- Use frozen lima beans, corn, and okra (thawed) for convenience; this is a stew, not a salad, so frozen works great
- The stew thickens as it sits; if reheating, add a splash of water or broth to loosen it
Variations
- Add pulled pork or smoked sausage alongside the chicken for a meatier, more traditional Brunswick stew
- Stir in a tablespoon of Worcestershire sauce and a splash of hot sauce at the end for extra depth
- Swap okra for a tablespoon of cornstarch slurry if you prefer the body without the okra texture

- Wash chicken and pat dry.
- Place chicken, water, peppercorns, bay leaves and salt in a Stir to combine.
- Heat, covered, in Microwave Oven 10 minutes. Stir contents. Heat, covered, in Microwave Oven an additional 5 minutes.
- If desired, remove chicken from bone and cut into 1-inch 5. Discard bay leaves and peppercorns.
- Return chicken to broth and add remaining ingredients.
- Heat, covered, in Microwave Oven 10 minutes.
- Uncover and heat an additional 5 minutes or until chicken and 9. Serve in soup bowl.
