Easy hearty crockpot Brunswick stew is the Southern smokehouse classic adapted for the slow cooker, no all-day fire required. Chicken and ham build the meaty backbone, while lima beans, corn, potatoes, and tomatoes round out the thick, almost-stewy vegetable medley.

The two-stage cooking is the trick. Chicken poaches with the potatoes, ham, onion, and water for 4 to 5 hours on low, then comes out long enough to debone before the meat goes back in. The pot turns to high for the final hour while the tomatoes, lima beans, and corn finish.

Deboning mid-cook keeps the chicken moist while building a richer broth from the bones. A small pinch of sugar at the end balances the tomato acidity without making the stew taste sweet.

Kitchen Tips

  • Bone-in chicken pieces give the most flavor. Skinless thighs work beautifully for tender, deeply flavored meat.
  • Let the broth simmer with the bones for the full first stage. Removing chicken too early loses the bone marrow boost.
  • Thaw frozen lima beans and corn before adding so they don’t drop the pot temperature.
  • Brunswick stew tastes better the next day. Make it ahead and reheat gently.

Variations

  • Add 1 pound pulled pork or smoked brisket in place of (or alongside) the ham for a deeper smoky version.
  • Stir in 1 cup barbecue sauce at the end for a sweeter, more Georgia-style Brunswick stew.
  • Use okra in place of (or in addition to) lima beans for a more traditional Deep South finish.

Directions

In a crockpot combine chicken with water, onion, ham, amd potatoes.

Cook covered on LOW for 4 to 5 hours or until chicken is done.

Lift chicken out of pot; remove meat from bones.

Return chicken meat to pot.

Add tomatoes, beans, corn, salt, seasoned salt, sugar and pepper.

Turn control to HIGH.

Cover and Cook on HIGH 1 hour. Serve in large individual bowls.
