Brownie Pie

The easiest brownie pie you’ll ever make: boxed brownie mix poured into frozen pie shells with chopped nuts and baked slightly underdone for a fudgy center. Makes 2 pies. Serve with mocha ice cream.

Prepare a box of brownie mix, stir in some chopped nuts, divide it between two frozen pie shells, and bake until the filling is still just slightly underdone.
That gooey, not-quite-set center is the whole point. It firms up enough to slice but stays fudgy and rich, especially when you hit it with a scoop of mocha ice cream.
This is the dessert you make when you forgot you were supposed to bring dessert.
Kitchen Tips
- Pull the pies when the filling is still slightly soft in the center. Overbaking turns the fudgy filling into dry cake.
- Serve warm for the gooiest texture, or let it cool completely for firmer, cleaner slices.
- Mocha ice cream is the suggested pairing, but coffee, vanilla, or salted caramel all work beautifully.

Add ½ cup nuts to prepared brownie mix.
Pour mixture into 2 pie shells.
Sprinkle remaining nuts on top.
Bake 20 minutes at 350℉ (180℃).
The brownie mixture should be slightly underdone.
Serve hot or cold with mocha ice cream.
