Brown rice, chicken broth, canned tomatoes, and a mirepoix of carrot, celery, and onion go into a single 12-cup casserole and cook hands-off while you do anything else. The sliced knackwurst goes in at the end with the herbs to warm through without overcooking.

Brown rice usually wants forty-five minutes to an hour on the stove and constant attention to prevent scorching. The microwave method skips all of that, surrounding the rice with steam from the broth and tomatoes inside the covered casserole for even tender cooking with zero stirring.

Directions

In 12-cup casserole, combine stock, rice, tomatoes, carrots, green and large onions, celery, garlic and bay leaf.

Cover and microwave at High for 10 minutes or until boiling; stir.

Cover and microwave at Medium (50%) for 45 to 60 minutes or until rice is tender.

Stir in sausages, parsley, oregano, basil and thyme; let stand, covered, for 15 minutes.

Discard bay leaf.
