Six ingredients. Twenty-five minutes. Warm, crumbly scones on the table with a cup of tea.

These use wholemeal flour for a nuttier, heartier texture than white scones, and honey dissolved in milk gives them a gentle sweetness that’s more wildflower than sugar bowl.

Butter gets rubbed into the dry ingredients by hand (no mixer, no fuss), and the dough comes together quickly into something soft and just slightly sticky.

Roll, cut, bake, and they puff up golden and fragrant in barely 12 minutes.

Kitchen Tips

  • Handle the dough as little as possible. Overworking wholemeal dough makes scones dense and tough.
  • A hot oven is essential. Get it properly preheated so the scones rise fast and stay light inside.
  • Warm the honey slightly if it’s thick so it dissolves easily into the milk.

Directions

Mix wholemeal, salt and baking powder.

Rub in the butter.

Dissolve the honey in the milk, add to dry ingredients and mix to a soft dough.

Roll out, cut out, and bake on a cookie sheet for 10 to 12 minutes at 425 degrees F.
