| 2 | each | kaffir lime leaves | |
| 1 | piece | lemon grass | |
| 1/2 | teaspoon | ginger | |
| 3 | tablespoons | nouk mam | (vietnamese fish sauce) |
| 1 | each | lemon | |
| 1/4 | pound | shrimp | |
| 1/4 | pound | oysters | |
| 1/4 | pound | crab meat | |
| 1/4 | pound | fish | pieces |
| 1/4 | pound | scallops | |
| 3/4 | cup | coconut milk | |
| 3 | each | red chili peppers | crushed |
| 1 | x | lime | wedges |
| 1 | x | rice | cooked, hot |
Chop lime leaves.
Juice lemon. Heat stock and add lime leaves, lemon grass, ginger, Nouk Mam and lemon juice.
Bring to a low boil, stirring well.
Add seafood and coconut milk.
Simmer at just below boiling until seafood is cooked, stirring constantly.
Add chilis at the last moment.
Serve with lime wedges and steamed rice.
