Ingredients

2 cups fish stock
2 each kaffir lime leaves
1 piece lemon grass
1/2 teaspoon ginger
3 tablespoons nouk mam (vietnamese fish sauce)
1 each lemon
1/4 pound shrimp
1/4 pound oysters
1/4 pound crab meat
1/4 pound fish pieces
1/4 pound scallops
3/4 cup coconut milk
3 each red chili peppers crushed
1 x lime wedges
1 x rice cooked, hot

Directions

Chop lime leaves.

Juice lemon. Heat stock and add lime leaves, lemon grass, ginger, Nouk Mam and lemon juice.

Bring to a low boil, stirring well.

Add seafood and coconut milk.

Simmer at just below boiling until seafood is cooked, stirring constantly.

Add chilis at the last moment.

Serve with lime wedges and steamed rice.
