Think of this as a savory broccoli bread pudding that happens to be stuffed with half a pound of cheddar.

Ground broccoli and onion get folded into a simple batter of flour, eggs, milk, and melted butter, then baked until puffed and golden.

The result? A crispy-edged, cheesy square that works as a main course or a show-stealing side.

Chef Tips

  • Drain the cooked broccoli thoroughly; excess moisture leads to a soggy bake
  • Use sharp or extra-sharp cheddar for stronger flavor that stands up to the broccoli
  • Let it rest 10 minutes after baking so the squares hold together when you cut them
  • A cast iron skillet works great if you don’t have a 9×9 pan
