Broccoli Chicken Casserole

I really liked this, the friend I made it for wasn't as keen on it. I layered rice on the bottom of the casserole dish and I wish I would've mixed it all up as the rice was a bit dry (I pre-cooked the rice). I would also add more curry and I used frozen broccoli and it was done well. I plan to make again. P.S. I also used low-fat Mayo and Low-fat soup, it tasted fine

Ingredients

6 x chicken breast halves, boneless and skinless boiled and cut into bite-size pieces
2 x broccoli stems boiled and cut into pieces
10.75 ounces soup, cream of chicken condensed cream
1 cup mayonnaise
1 teaspoon curry powder
3 tablespoons lemon juice
8 ounces cheddar cheese shredded

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place chicken and broccoli in a lightly greased 9x13 inch baking dish.

In a medium saucepan combine cream of chicken soup, mayonnaise, curry powder and lemon juice.

Bring all to a boil over low heat, stirring constantly.

Pour soup mixture over chicken/broccoli mixture and top with shredded cheese.

Bake at 350 degrees F (175 degrees C) for about 20 minutes or until cheese is melted.

Potato Latke Muffins

This is a great recipe, different way to cook potato latkes, after baking they turned out very nice, golden brown on top and firm, we also made the cranberry pear sauce, serve with latkes, they were delicious together.
