Silky broccoli bisque with a twist of curry powder and lime juice, garnished with sour cream and chives. Serve it hot in winter or chilled on warm summer evenings.

Curry powder gives this bisque an unexpected warmth that plays beautifully against the fresh squeeze of lime juice stirred in right before serving.
The broccoli simmers with onion and butter in chicken broth, then gets blended smooth into a velvety, vibrant green purée.
Here’s the best part: it works both ways. Serve it steaming hot when the weather turns cold, or chill it for four hours and serve it cool on a summer evening.
Either way, a dollop of sour cream, a thin lemon slice, and a sprinkle of chives on top make it look as good as it tastes.
Chef Tips
- Blend in batches and never fill the blender more than halfway with hot liquid. Hot soup expands and can blow the lid off, so keep a towel over the top and hold it down.
- The curry powder should be subtle, not overpowering. Two teaspoons adds warmth without turning this into a curry soup.
- If serving cold, taste again after chilling. Cold dulls flavors, so you may need an extra squeeze of lime or pinch of salt.
- An immersion blender works even better if you have one. Blend right in the pot and skip the mess entirely.

Place the cut broccoli in a large saucepan along with the broth, onion, butter, salt, curry powder and pepper.
Bring to a boil. Reduce heat and simmer, covered, for 8 to 12 minutes or until broccoli is just tender.
Place about 1½ to 2 cups of the mixture at a time into a blender container.
Cover and blend until smooth. Pour into bowl or another large pan.
Repeat with remaining mixture. BE CAREFUL. THE HOT LIQUID MAY SCALD YOU.
Stir in the lime juice.
Now you can either cover and refrigerate at least 4 hours to serve cold (great in warm weather), or you can go right ahead and serve it hot (great in cold weather).
Once ladled out, you can garnish with a thin slice of lemon, a small dollop or sour cream, and a sprinkling of chives.
