Breezy Point Chicken Curry

I am your average cook. I love East Indian curried food. My husband doesn't care for curry. One night I decided I was going to cook for my taste instead of his. I went to Google and pulled up RecipeLand.com. Searched for chicken curry. I wasn't prepared as to any of the ingredients needed, so I had to look for a recipe that had basic ingredients. I found Breezy Point Chicken Curry...and WOW.. I fixed the recipe and put it over regular white rice. What a find. It was so good.It tasted just like the Chicken Curry I have had so often in East Indian Restaurants. The best thing that came out of this whole experience, is my husband loved it!!.. I told him he could eat it or not.. I was sorry he loved it too, cause that meant no "leftovers". I would recommend this recipe to anyone that wants to try a curry recipe.. Thank you RecipeLand!! I am now a member.P.S. It only took 40 min. to prepare, and that meant defrosting the chicken in the microwave.

Ingredients

1/4 cup celery sliced
1/2 cup onion chopped
1 clove garlic minced
2 tablespoons flour, all-purpose
2 each chicken bouillon cubes
1 cup chicken broth, low salt
1 cup milk, skim
1/2 cup applesauce unsweetened
3 tablespoons tomato paste
4 tablespoons curry powder
3 cups chicken cooked, cubed

Directions

Lightly coat a non-stick skillet with cooking spray.

Over medium heat, sauté celery, onion, and garlic until translucent.

Add curry powder and cook 1 minute, stirring constantly.

Dissolve bouillon cubes in water.

Put flour in a small bowl; gradually stir in bouillon to make a paste.

Add flour-boullion mixture, milk, applesauce, and tomato paste to skillet; cook and stir over medium heat until bubbly.

Stir in chicken and heat through.

Serve over rice with an assortment of condiments: crumbled turkey bacon, raisins, toasted coconut, chopped peanuts, chopped hard-boiled eggs, diced bell pepper, chutney, diced bananas, and yogurt.

A Simplified Peking Duck

I have heard of the pecking duck for quite a long time but never dared to try making it. This afternoon I tried this simplified peking duck, while it was cooking, my son couldn't stop asking me when will it be ready, the smell filled the room. When the dish hit the table, my son and my husband were drooling. Awesome!
