Brazos Turkey Chili

Ingredients

1large yellow onion chopped
6each garlic cloves
2tablespoons cumin seeds
6tablespoons olive oil divided use
2each sweet red bell peppers seeded,
2each poblano peppers
2each jalapeno peppers seeded,
2each serrano pepper seeded and chopped
1cup chile paste Red, Ancho and New Mexico
3tablespoons red pepper flakes
1tablespoon coriander ground
1tablespoon cinnamon
1tablespoon black pepper
2pounds ground turkey
4cups tomatoes, canned with juice chopped
2cups chicken broth
1cup beer mexican
1can chipotle peppers in adobo sauce, 7 ounces
1/4cup chocolate unsweetened grated
1x scallions, spring or green onions chopped, for garnish
1x cilantro
1x cheese grated
1x flour tortillas strips, fried
1x sour cream

Directions

Saute onion, garlic and cumin in 3 tablespoons olive oil until transparent.

Add chopped peppers and sauté over medium heat about 10 minutes.

Add chili paste, chili powder, coriander, cinnamon and pepper.

Saute 5 minutes and set aside.

Brown turkey in remaining olive oil.

Add tomatoes, chicken stock and beer and chiptles.

Simmer slowly 30 to 45 minutes. Just before serving, stir in chocolate.

Garnish with chopped green onions, cilantro, grated cheese, tortilla str ips and sour cream.

Makes 8 to 10 se rvings.

Shrimp Paesano

The bigger the shrimp, the easier it is..I have been doing this over and over and love it. I used to work at Paesano's many years ago, when there was one in Corpus Christi, TX...and this is very good copycat!
