| 1/2 | cup | sherry | |
| 1 | teaspoon | olive oil | |
| 5 | cups | leeks | well washed |
| 1 | cup | mushrooms, wild | sliced |
| 2 | cups | green beans | cut into, 1/3" lengths |
| 1 | teaspoon | orange juice | |
| 1/2 | teaspoon | orange zest | grated |
| 1 | tablespoon | cider vinegar | |
| 1 | x | salt and black pepper | to taste |
In a large skillet, heat sherry and oil over medium high heat.
Add leeks and cook, stirring frequently, for 3 minutes.
Add mushrooms and beans.
Saute until the mushrooms begin to exude moisture, about 5 minutes.
Stir in the remaining ingredients and remove from heat.
Serve warm.
