40 minAcorn squash was practically designed to be stuffed, and this filling earns every inch of that natural bowl.
Ground turkey gets sauteed with chopped red apple and onion, then bound together with a quick soy sauce gravy and studded with raisins for little pops of sweetness.
The microwave does double duty here, cooking the squash tender while you build the filling on the stovetop, so the whole thing comes together fast on a weeknight.
Kitchen Tips
- Choose squash that sit flat so they won’t tip in the microwave or on the plate
- Swap turkey for ground chicken or lean pork if that’s what you have on hand
- A pinch of cinnamon or nutmeg in the filling plays up the apple-raisin combo beautifully
- Leftovers reheat well: cover with a damp paper towel and microwave until hot
