Ingredients

1 cup carrots chopped
1 cup green bell peppers or red, chopped
1 cup onion chopped
3 large garlic cloves minced
1 tablespoon chili powder
2 teaspoons cumin ground
28 ounces italian plum (roma) tomatoes canned, with juice, chopped
15 ounces red kidney beans canned, drained
15 ounces white kidney beans, canned canned, drained, prefer cannellini
15 ounces black beans canned, drained
2 tablespoons chipotle peppers in adobo sauce, canned, chopped

Directions

Cook for 30 minutes, stirring, and add salt and pepper.

Roasted Parsnip and Pear Soup

Fairly nice, my husband made this soup yesterday, it was delicious, roasted pears and parsnips with low-fat milk and our homemade vegetable broth, and the balsamic vinegar after boiling it was tasty, drizzling on top of the soup, the flavor was so great. An excellent recipe.
