| 1/2 | cup | blueberries | fresh or frozen |
| 1 1/2 | tablespoons | ginger | minced |
| 1/2 | each | lemon | juice |
| 2 | cups | blueberry juice | |
| 1/2 | cup | sparkling wine | divided |
Mash blueberries with ginger, sugar and lemon juice.
Add blueberry juice and let steep for at least 10 minutes.
Strain, divide into 4 champagne flutes.
Top each with 1/2 cup sparkling wine.
I just found a wonderful way to make bellini, this blueberry ginger bellini is great, I can enjoy my favorite fruits and wine at the same time, and it tastes great.
