Blueberry Citrus Cake

A lemon cake mix gets a serious upgrade with orange juice and fresh blueberries, then frosted with a homemade citrus cream cheese whipped frosting loaded with fresh orange and lemon zest. Semi-homemade but nobody will know.

1 hrsHere’s how you turn a box of lemon cake mix into something that tastes like it came from a bakery.
Orange juice replaces some of the water in the batter, fresh blueberries get folded in for pops of juicy fruit, and the whole thing bakes into two golden layers dotted with purple.
But the real star is the frosting. Cream cheese and butter get whipped with powdered sugar, fresh OJ, and real whipping cream, then loaded up with freshly grated orange and lemon zest. It’s tangy, fluffy, and bursting with bright citrus flavor.
Stack the layers blueberry-side up for the prettiest presentation.
Kitchen Tips
- Toss the blueberries with a tablespoon of flour before folding them in. This keeps them from sinking to the bottom of the batter.
- Use fresh orange juice and freshly grated zest. Bottled juice and dried zest won’t give you the same bright, punchy citrus flavor.
- Beat the whipping cream to soft peaks before folding into the frosting. Stiff peaks will make the frosting dense instead of light and airy.
- Fresh or frozen blueberries both work. If using frozen, fold them in still frozen so they don’t bleed purple streaks through the batter.

Directions
Preheat oven to 350℉ (180℃).
Grease and lightly flour 2 8 inch or 9 inch round cake pans.
In a large bowl blend cake mix, eggs, oil, water and orange juice.
Once blended beat on medium speed 2 full minutes.
Gently fold in blueberries.
Pour into pans and bake 30 to 35 minutes or til done.
Cool on rack for 10 minutes, then invert on rack (blueberry side up) and cool completely.
For frosting: Blend butter and cream cheese until fluffy.
Beat in powdered sugar and orange juice.
In a separate bowl beat the whipping cream until soft peaks form.
Blend whipped cream into frosting and add grated zest.
Beat til combined and frost cake as you would normally frost a 2 layer cake.
(Blueberry side of layers should be up).
