| 15 | ounces | black beans | can, rinsed, drained |
| 30 | ounces | corn | whole kernel, (2 - 15 oz cans), drained |
| 8 | each | scallions, spring or green onions | chopped |
| 2 | each | jalapeno peppers | seeded, minced |
| 1 | each | sweet bell pepper | green, chopped |
| 1 | each | avocado | peeled, pitted, diced |
| 4 | ounces | pimentos | jar |
| 3 | each | tomatoes | seeded, chopped |
| 1 | cup | cilantro | fresh, chopped |
| 1 | each | lime | juiced |
| 1/2 | cup | salad dressing, italian | |
| 1/2 | teaspoon | garlic salt |
In a large bowl, combine the black beans, corn, green onions, jalapeno peppers, bell pepper, avocado, pimentos, tomatoes, cilantro, lime juice, and italian dressing. Season with garlic salt. Toss, and chill until serving.

It was very yummy but I think it would've been a lot better if i'd peeled them or used red potatoes. I also recommend using roma or vine ripened tomatoes instead of large tomatoes.
