A frozen Oreo ice cream pie with 42 cookies, chocolate and vanilla ice cream layers, and a ring of whole Oreos standing guard around the edge. Topped with whipped cream and chocolate fudge sauce. No baking, pure indulgence.

Forty-two Oreos walk into a pie plate. None of them walk out. This frozen masterpiece uses crushed cookies for the crust, whole cookies standing upright around the rim like a crown, chopped cookies between the layers, and more crumbs pressed into the top.

Between all those cookies? Scoops of chocolate ice cream on the bottom and a smooth layer of vanilla ice cream spread over the top.

Finish with whipped topping and a drizzle of chocolate fudge sauce, and you’ve got a dessert that kids lose their minds over and adults pretend they’re only having one slice of.

Kitchen Tips

  • Press the 14 standing cookies into the crust while it’s still soft. They need that base layer to anchor them upright.
  • Scoop the chocolate ice cream into individual balls rather than spreading it flat. This creates air pockets that the chopped cookies and vanilla ice cream nestle into.
  • Freeze for 15 minutes between layers. This prevents the vanilla ice cream from melting the chocolate layer beneath it.
  • Pull the pie from the freezer about 5 minutes before slicing. A slightly softened pie cuts much cleaner than a rock-solid one.

Directions

Finely crush 22 cookies.

Mix 1¼ cup crumbs and margarine; set aside remaining crumbs.

Press onto bottom of 9” pie plate. Stand 14 cookies around edge of plate, pressing lightly into crust.

Scoop chocolate ice cream into balls; arrange in prepared crust.

Coarsely chop remaining 6 cookies; sprinkle over ice cream scoops.

Spread softened vanilla ice cream evenly over cookie layer; freeze 15 minutes.

Top with a layer of reserved cookie crumbs, pressing gently into ice cream.

Freeze several hours or overnight.

To serve, garnish with whipped topping and chocolate sauce.
