15 minAll the drama of a Black Forest cake in a parfait glass, minus the sugar bomb. Sugar-free chocolate pudding gets blended with cream cheese for a rich, mousse-like layer, while tart sour cherries are thickened with cornstarch into a glossy, spoonable sauce.
Spoon them into glasses in alternating layers, finish with pudding on top, and drop two whole cherries on as garnish.
Fifteen minutes, six servings, no oven. This is the dessert for when you want something that feels indulgent but keeps things in check.
Pro Tips
- Blend the cream cheese with a small amount of milk first until completely smooth before adding the rest. This prevents lumps in the pudding layer.
- Cook the cherry sauce until it boils for a full minute. That’s what activates the cornstarch and gives you a thick, glossy consistency instead of a runny mess.
- Let the cherry layer cool before assembling. Hot cherries will melt the pudding layer and blur your clean parfait stripes.
- Assemble just before serving for the best texture, or up to 2 hours ahead if refrigerated. Much longer and the layers start to bleed together.
