English muffin pizza bites quartered into one-bite pieces, topped with pepperoni, green pepper, onion, and mozzarella, then microwaved until the cheese melts. Five minutes total from start to eating. This is the after-school snack that every kid of the ‘90s grew up on, and it still works.

Toasting the muffin halves first is the step that keeps these from going soggy. The toasted surface creates a barrier between the sauce and the bread, buying you enough time to eat them before they turn mushy. Skip the toast step and you get a wet, floppy mess.

Cutting each muffin half into quarters before microwaving is smart for two reasons. Smaller pieces heat more evenly in the microwave, and bite-size means no knife needed at the table. Each quarter gets its own piece of green pepper and half-slice of pepperoni, so every bite is a complete mini pizza.

One minute on HIGH with a half-turn at 30 seconds melts the cheese evenly. Microwaves have hot spots, and rotating the plate halfway through prevents some pieces from being scalding while others are still cold.

Directions

Split the muffins in half and toast them in the toaster.

Spread the pizza sauce on both halves of the muffins.

Top with the onions. Cut each muffin half into four pieces.

Place the eight muffin pieces in a circle around the edge of a paper plate (four plates will be used).

Lay one-quarter section of the green pepper on top of each muffin piece.

Place one-half slice of the pepperoni on top of each muffin piece.

Top evenly with the mozzarella cheese.

Place each plate, uncovered, in the microwave, and cook on HIGH for 1 minute; rotate each plate one-half turn after 30 seconds.
