Sliced strawberries sweetened with powdered sugar, served alongside a billowy whipped cream flavored with vanilla and orange liqueur. Spoon both over pancakes or crepes for a brunch topping that turns a basic breakfast into something worth lingering over.

Powdered sugar is the right choice for both sweetening the berries and the cream. It dissolves instantly into the berry juices and whips smoothly into the cream without any graininess. Granulated sugar would leave gritty undissolved crystals in both.

The whipped cream gets its character from the liqueur. Triple Sec, Grand Marnier, or Cointreau all work, each adding a different intensity of orange flavor. A couple tablespoons is enough to taste without making the cream boozy. If you’re serving kids, extra vanilla replaces the liqueur without losing much.

Sweeten the berries first and let them sit while you whip the cream. Even 10 minutes of contact with the sugar draws out berry juice through maceration, creating a light natural syrup that soaks into the pancake or crepe underneath.

  • Chill the bowl and whisk before whipping the cream. Cold equipment makes the cream whip faster and hold its peaks longer.

  • Chocolate drizzle: Add a thin stream of warm chocolate sauce over the berries and cream for a dessert-level presentation.
  • Lemon cream: Skip the orange liqueur and add lemon zest and a squeeze of lemon juice to the cream instead.
  • Mixed berry: Use a combination of strawberries, raspberries, and blackberries for more color and flavor complexity.

Directions

Sweeten berries to taste with icing sugar and set aside.

Beat the remaining icing sugar with whipping cream, vanilla and liqueur until stiff.

Serve the whipped cream filling and berries on pancakes or crepes.
