Belgian club soda waffles use sparkling water in place of milk for ultralight, crisp-edged Bisquick waffles in 20 minutes. Four ingredients, no buttermilk needed.

Belgian club soda waffles are the four-ingredient breakfast trick that makes you wonder why you ever bothered with milk-based waffle batter. Substituting club soda for the standard liquid gives these waffles two superpowers: the carbonation provides extra leavening (on top of the baking soda already in Bisquick), and the lack of dairy creates a crisper, more shattering exterior than milk-based waffles can match.

The trick is using cold, freshly opened club soda. Flat soda gives flat waffles. Carbonation that has already escaped during sitting can’t lift the batter the way fresh bubbles do.

A real Belgian waffle iron with deep pockets makes these dramatic. The big, fluffy squares trap maple syrup, pockets of butter, and fresh berries in ways a regular waffle iron can’t.

Pro Tips

  • Use freshly opened club soda. A bottle that’s been open in the fridge for a day has lost most of its carbonation, and the waffles will be flat and dense.
  • Don’t overmix. Stir just until the batter is mostly smooth; a few small lumps are fine. Aggressive mixing knocks out the bubbles you need for lift.
  • Cook the batter immediately after mixing. The carbonation starts dissipating the moment the soda hits the dry ingredients, so plan to cook in batches as soon as the batter is combined.
  • Keep finished waffles in a 200°F (95°C) oven directly on the rack to stay crisp while you cook the rest. Stacking them on a plate steams them limp.

Variations

  • Substitute sparkling water or seltzer for club soda; the result is identical, since both are carbonated water.
  • Add 1 teaspoon of vanilla extract and a pinch of cinnamon for warmer, sweeter waffles.
  • For chocolate waffles, swap ¼ cup of the Bisquick for cocoa powder and add 2 tablespoons sugar.

Serve with fresh strawberries, blueberries, whipped cream, maple syrup, or Nutella for full Belgian-cafe vibes.
