Beef, Pepper and Mushroom Kabobs

Ingredients

1pound beef, sirloin steak boneless, cut 1inch thick
1large sweet bell pepper (green, red or yellow bell), cut into 1 1/4inch pieces
12large mushrooms
6ounces long grain and wild rice blend
1/4teaspoon salt
seasoning
1tablespoon lemon juice fresh
1tablespoon olive oil
1tablespoon water p water
2teaspoons dijon mustard
1teaspoon honey
1/2teaspoon oregano leaves dried
1/4teaspoon black pepper

Directions

Trim fat from beef steak; cut into 1 1/4 inch pieces.

In large bowl, whisk together seasoning ingredients; add beef, bell pepper and mushrooms, tossing to coat.

Alternately thread pieces of beef, bell pepper and mushrooms on each of four 12-inch metal skewers.

Prepare rice according to package directions; keep warm.

Meanwhile place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat.

Broil 9 to 12 minutes for medium- rare to medium doneness, turning occasionally.

Season with salt.

Serve kabobs with rice.

Cook's tip: To grill, place kabobs on grid over medium, ash-covered coals.

Grill kabobs, uncovered, 8 to 11 minutes for medium-rare to medium doneness, turning occasionally; season with salt.

Baba Ganouj (Tangy Eggplant Dip)

Cooked the eggplant at 350o for 40 mins -- worked like a charm. I'm not a great one for salt, but I did add a bit more than the 1/2 tsp called for. My 2 year old son is stuffing his face with it as I type, so it has his approval!! :)
