| 1 | x | guacamole | southwest guacamole |
| 1/2 | cup | vegetable oil | |
| 10 | each | corn tortillas | 5 to 7 inches cut into pieces |
| 1 | pound | ground beef | |
| 2 | each | anaheim chilies | seeded and finely chopped |
| 1/2 | cup | onion | chopped |
| 15 | ounces | pinto beans | drained |
| 8 | ounces | cheddar cheese | |
| Garnish | |||
| 1 | x | sour cream | dairy |
Prepare Basic Red Sauce and Southwest Guacamole; set aside.
Heat oil in 10-inch skillet until hot.
Cook tortilla strips in oil until light golden brown, about 1 minute; drain.
Cook and stir ground beef, chiles, and onion until beef is brown; Heat oven to 350 degrees F.
Arrange tortilla strips in bottom of greased rectangular baking dish 13 X 9 X 2-inches.
Top with beef mixture, Basic Red Sauce, beans, and cheese.
Bake until hot and bubbly, 25 to 30 minutes.
Serve with Southwest Guacamole and Sour Cream.

This is exactly the recipe I've been searching for! I tried this months ago and my husband LOVED the potatoes. I am so glad I found this website! This recipe is simple to prepare and comes out of the oven very tasty & pleasing.
