| 2 1/2 | pounds | beef chuck steak | |
| 3 | tablespoons | vegetable oil | |
| 4 | large | onions | chopped |
| 2 | each | garlic cloves | crushed |
| 1 | tablespoon | prepared mustard | |
| 2 | tablespoons | flour, all-purpose | |
| 1 1/2 | cups | pale ale | |
| 1 | each | bay leaf | |
| 2 | each | parsley sprigs | |
| 1/4 | teaspoon | peppercorns | |
| 1/2 | teaspoon | thyme | |
| 1 | teaspoon | salt | |
| 1 | teaspoon | sugar | |
| 1/4 | teaspoon | nutmeg | grated |
Preheat oven to 350 degrees F. Trim beef and brown in a skilet in hot oil.
Transfer beef to a casserole and brown onions in oil.
Add garlic, mustard, and flour.
Stir in ale and add the bouquet garni ingredients, tying them in a small piece of cheesecloth.
Add salt, sugar, and nutmeg. Pour sauce over browned beef.
Cover casserole and place in the oven for 2 hours.

I made this without the garlic and provolone, and it still turned out great. It delicious despite of my minor baking disaster. There was a glob of old, solidified, banana bread hidden on the bottom of my oven that started smoking like crazy while I was baking the focaccia! I had to stop baking half way through because the smoke was getting too thick...
