Fifteen minutes. One skillet. Dinner done.

This is the weeknight hero recipe that every busy household needs in rotation. Ground beef browns first, then uncooked egg noodles, frozen corn, green onions, tomato sauce, salsa, and water all go straight into the same pan. Pop the lid on, let it simmer, and the noodles cook right in the sauce.

The salsa adds a chunky, zesty kick that livens up what could otherwise be a plain noodle dish. And since the noodles absorb all that tomatoey, beefy liquid as they cook, every bite is loaded with flavor.

Serves 4 to 6 and cleans up in minutes. That’s what winning looks like on a Tuesday.

Kitchen Tips

  • Use thick, chunky salsa for the best texture. Thin, watery salsa will make the dish too loose.
  • Stir occasionally while the noodles simmer to keep them from sticking to the bottom of the pan.
  • Top with shredded cheese, a dollop of sour cream, or sliced avocado for extra flair.
  • Extra-lean ground beef keeps the dish from getting greasy, so you can skip the draining step entirely.
