Beef, Pepper and Mushroom Kabobs

Ingredients

1pound beef, sirloin tip or steak, cut 1 1/4 inch thick, or boneless chicken cubes, or boneless pork cubes
1each green bell pepper or red or yellow bell pepper, cut into 1 1/4 inch pieces
2tablespoons olive oil
1tablespoon lemon juice
1tablespoon water
2teaspoons dijon mustard
1teaspoon honey
1/2teaspoon oregano leaves dried, crushed
1/4teaspoon black pepper
12each mushrooms large
1x salt

Directions

Trim excess fat from beef top sirloin steak; cut steak into 1-1/4 inch pieces.

Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in large bowl.

Add beef, bell pepper and mushrooms, turning to coat.

Alternately thread beef, bell pepper, and mushrooms on each of four 12 inch metal skewers.

Place kabobs on rack in broiler pan so surface of meat is 3 to 4 inches from heat.

Broil 9 to 12 minutes for rare to medium, turning occasionally.

Season with salt, if desired.

10 Minute Szechuan Chicken

This recipe is easy and delicious!! We made a few changes: used thin chicken breasts (or you can pound them flat), add grated ginger, less soy sauce, substitute honey for the suger and chili oil for the cayenne pepper. We ate it with veggie fried rice (made in the same wok for easy cleanup). Yum!
