Texas-style basting sauce with butter, bacon drippings, lemon juice, Worcestershire, and chili powder. Makes 3.5 cups, enough to mop a whole 5-pound brisket through a long, slow smoke.

Butter (or margarine) and bacon drippings melt together into a rich, smoky base, then lemon juice and Worcestershire add a tangy punch.
Chili powder, salt, pepper, and garlic powder dissolved in water stretch it out to a full 3.5 cups, plenty to keep basting a 5-pound brisket through a long cook.
Every brush adds another thin layer of flavor that builds up into a deeply seasoned bark.
Pro Tips
- Use real butter and real bacon drippings if you can; the flavor difference over margarine is night and day
- Keep the mop sauce warm on the side of the grill while smoking so it doesn’t cool down the meat when you baste
- Apply with a barbecue mop or a brush every 30 to 45 minutes during the cook
- This sauce works just as well on pork ribs, chicken quarters, or a whole smoked turkey

Butter is preferred in this dish for flavor, but you may prefer margarine.
In a saucepan, combine margarine, bacon drippings, lemon juice and Worcestershire Sauce. Cook over low heat until butter margarine melts. Dissolve Chili Powder, Salt, Pepper and Garlic Powder in water and add to margarine mixture. Bring to a boil. Lower heat and simmer for 15 minutes.
Makes 3½ cups. Will serve to baste 5 lbs. brisket.
