Meal prep doesn’t have to be complicated, and this curry basmati rice proves it.

Cook a cup of fragrant basmati with curry powder, pack it into a container with whatever raw vegetables you have on hand, and you’ve got lunch sorted for the week.

Cauliflower, broccoli, mushrooms, zucchini, okra... really anything that pairs well with warm curry spice is fair game.

Just pop it in the microwave at work and in about 5 minutes you’ve got a hot, aromatic meal that’ll make your coworkers jealous.

  • Rinse basmati rice in cold water until the water runs clear before cooking for fluffier, separated grains

Directions

Cook 1 cup of Basmaty rice with 1 to 2 teaspoons of curry and a little salt.

Cool down and fill into plastic container.

Add vegetables, for example cauliflower, mushroom, broccoli, zucchini, ocra, or anything else that you can imagine to taste good with curry.

Sprinkle with more curry.

At work, microwave about 5 minutes or until veggies are cooked.
