Cook a cup of fragrant basmati with curry powder, pack it into a container with whatever raw vegetables you have on hand, and you’ve got lunch sorted for the week.
Cauliflower, broccoli, mushrooms, zucchini, okra... really anything that pairs well with warm curry spice is fair game.
Just pop it in the microwave at work and in about 5 minutes you’ve got a hot, aromatic meal that’ll make your coworkers jealous.
Kitchen Tips
- Rinse basmati rice in cold water until the water runs clear before cooking for fluffier, separated grains
- Sprinkle extra curry powder over the raw vegetables before packing so the spice blooms when microwaved
- Cut vegetables into small, even pieces so they cook through in just 5 minutes in the microwave
Variations
- Add chickpeas or cubed tofu for extra protein
- Stir in a spoonful of coconut cream after microwaving for a richer, creamier lunch
- Try different spice blends like garam masala or ras el hanout to mix things up through the week
