Ingredients

2tablespoons vegetable oil olive
2tablespoons vinegar cider
2tablespoons basil fresh, chopped
1/2teaspoon salt
1/4teaspoon black pepper
3cups rice cooked, cooled
2each tomatoes chopped
1each cucumbers seeded, chopped
1each onion red, small, chopped

Directions

In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
