| 2 | tablespoons | vegetable oil | olive |
| 2 | tablespoons | vinegar | cider |
| 2 | tablespoons | basil | fresh, chopped |
| 1/2 | teaspoon | salt | |

| 3 | cups | rice | cooked, cooled |
| 2 | each | tomatoes | chopped |
| 1 | each | cucumbers | seeded, chopped |
| 1 | each | onion | red, small, chopped |
In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.

This boiled beef recipe was just wonderful - easy to make and delicious to eat! I highly recommend it. A perfect winter meal. I added a single fat leek, washed and shredded thickly lengthwise. What a flavorful broth!
