Apple juice is the liquid base here, which gives this sauce a natural sweetness and fruity roundness that water alone can’t provide. Combined with tomato paste for body, vinegar for tang, and soy sauce for umami depth, it builds into something genuinely layered despite the straightforward ingredient list.

Honey goes in off the heat. This is deliberate. Adding it during simmering breaks down its more delicate flavor compounds and can push it toward slightly bitter. Off-heat, it just sweetens and rounds the sauce cleanly.

The sauce gets blended smooth at the end, giving it a consistent, restaurant-style texture rather than the chunky character of most homemade barbecue sauce recipes.

Cinnamon is in there - just a pinch. You may not identify it as cinnamon when you taste the finished sauce, but it adds a warm background note that ties the sweet and savory elements together.

Chef Tips

  • Stir the honey in after removing the pan from heat. This is what preserves its delicate flavor and prevents bitterness.
  • Blend while still warm for the smoothest result. Hold the blender lid firmly - hot liquid expands when blended and can force the lid off.
  • Keeps in a sealed jar in the refrigerator for up to 2 weeks.

Variations

  • Add a pinch of cayenne or chipotle powder for smoky heat.
  • Use tamari instead of soy sauce to keep the sauce gluten-free throughout.

Directions

  1. Heat oil in saucepan. Add onions and cook, covered, until they are golden.

  2. Combine tomato paste and apple juice and blend well. Add this and all remaining ingredients, except honey, to the onions. Simmer for 20 minutes. If it gets too thick add a little water. The sauce should be thick at the end of cooking time.

  3. Remove from heat and stir in honey.

  4. Blend until smooth in blender or food processor.
