Pineapple juice might sound like an odd call for shrimp, but trust the process.

That tropical sweetness mellows out the hot sauce and lemon, creating a marinade that caramelizes into sticky, charred edges on the grill.

A couple hours in the fridge is all the shrimp need to soak up the flavor before they hit a hot grate for just minutes per side.

Skewer them up for a backyard party appetizer or pile them over rice for a full dinner that screams summer.

Pro Tips

  • Leave the tails on for easy grabbing and a better presentation on skewers
  • Don’t marinate longer than 3 hours; the acid in the citrus will start to break down the shrimp texture
  • A grill basket keeps smaller shrimp from falling through the grates
  • Pat the shrimp dry before grilling for better char and caramelization
