Budget-friendly beef stew with round steak, potatoes, carrots, and celery simmered in tomato sauce. A hearty one-skillet meal that feeds 10 from simple pantry staples.

When the budget gets tight, this stew steps up. Round steak cubes get browned in a nonstick skillet, then everything else goes in: potatoes, carrots, celery, green pepper, onion, and a splash of tomato sauce. An hour of simmering turns tough, affordable beef into fork-tender pieces.

No fancy stock, no wine, no herbs you can’t find in any grocery store. Just a bay leaf, some parsley, and honest cooking. It feeds a crowd of ten and costs next to nothing.

Kitchen Tips

  • Brown the beef in batches over high heat so the pieces sear rather than steam.
  • Keep the lid on while simmering to trap moisture and tenderize the round steak.
  • Cut all the vegetables roughly the same size so they cook evenly alongside the meat.
