Banana split sundaes for two skip the ice cream parlor entirely and build the whole sundae at home in 10 minutes. The microwave hot fudge sauce is the only thing that actually cooks: 2 ounces of semisweet chocolate melted in a glass measuring cup, then stirred together with corn syrup and sweetened condensed milk.

The corn syrup is the secret to a fudge sauce that stays glossy and doesn’t seize. It keeps the chocolate fluid even as it cools, so the sauce stays pourable on cold ice cream instead of hardening into a brittle shell. Skip it and the sauce turns chalky.

Sweetened condensed milk does the smoothing work, giving the sauce body and a caramelized milk-sugar note that makes it taste like real ice-cream-shop fudge instead of a thinned-down ganache. The 1:1 ratio of corn syrup to condensed milk is what makes this work; mess with it and the sauce won’t pour properly.

Directions

Place chocolate in a 2-cup measure. Micro-cook, uncovered, on 100% power for 2 to 3 minutes or until melted, stirring once. Stir in corn syrup, and sweetened condensed milk. Micro-cook, uncovered, on 100% power for 45 seconds to 1 minute or until heated through. Stir in vanilla. Serve warm atop ice cream. Sprinkle with peanuts. Arranged quartered bananas around ice cream.
