Ingredients

2 each bananas ripe
100 grams flour, self-rising self-raising
1/2 teaspoon caster sugar
1/2 teaspoon lemon juice
100 grams caster sugar
1 teaspoon cinnamon
1 cup vegetable oil for frying
1 x strawberry jam or rasberry jam

Directions

Mash bananas with 100 g of castor sugar and lemon juice, add flour and mix to a thick paste.

Heat oil in a small pan to smoking point, then turn heat to low. Use 2 teaspoons to push one teaspoon of dough into the oil, doing no more than 6 at a time.

Turn puffs over and keep turning for 2 minutes. Remove with a slotted spoon, drain and roll in cinnamon and sugar.

Serve with jam.

Chicken Curry Casserole

This rice casserole was a big hit with my family! The only problem was that after 45 minutes the rice wasn't cooked at all. I baked it, covered, for another 30 minutes, and it was perfect. I think the next time I would cook it with covered. The taste was just excellent!
